At Capriole we still make a variety of fresh and aged chèvre the farmstead way -- by hand, on our own farm, using only the milk from our own herd. Our farm is located just minutes north of Louisville and has been in our family for over 125 years. Cheesemaking began when we modified the old barn and got our first dairy goats as a 4-H project for the children. From milk to cheese to customer, the process begins and ends on the farm, and is one we all share with personal pride. Our award-winning cheeses include fresh, ripened and aged chèvre. They are a combination of old and new - uniquely American originals.
