Everona Dairy
Everona Dairy started because Dr. Patricia Elliott bought a Border Collie puppy on impulse in 1992 at the Montpelier Spring Wine Festival. Then she had to get sheep so the collie would have work to do. One day, she was trying to think of some way for the sheep to pay their own way , and it occurred to her that she might milk them. One thing led to another and now Everona Dairy is milking over 100 sheep and has 4 employees. Everona's award-winning cheeses reflect the qualities of the limestone ridge with its delicious sweet water, covered by the rich red Piedmont soil that grows lush and tender grasses in the foothills of the Blue Ridge Mountains.
Products

Everona Piedmont - Sheep's milk cheese aged to a perfection of taste - nutty flavor, even flowery, with a slight tang and earthy aftertaste characteristic of good sheep's milk cheese.

Stony Man was a new creation in 2005, and just took 3rd Place for Aged Sheep's Milk Cheeses at the American Cheese Society Competition in Portland, Oregon! It has a smooth, dense texture. As it ages, it forms a great sweet finish.

Everona Chive and Dill - Our award-winning Piedmont with chives or dill scattered throughout.

Everona Cracked Pepper - The taste of fresh cracked black pepper adds zip to this classic Everona Piedmont.

Pride of Bacchus is soaked in a wonderful fruity red wine from Burnley Vineyards in nearby Gordonsville - Rivanna Red. The result is a distillation of a fruity, heady scent of a warm Virginia sunset.

Also available, sometimes: Hot Pepper, Tomato Torta, Herbs de Provence, Marble, Saffron, & Muffaletta
