What makes Flat Creek Lodge artisanal cheeses distinct is that the milk, whether from the cows or the sheep, comes from a standard, rarely changing group of animals. That means it is more consistent and more consistently Flat Creek Lodge, but it also means that fluctuations in season can be tasted too. For example, milk generally has a higher fat content during the colder winter months. Artisanal cheeses are hand-crafted, and each batch can provide a somewhat new experience. All of the cheeses are made from raw milk except the Flat Creek Feta, which is pasteurized.
