EATING WELL IS ONE OF OUR PASSIONS! Our cows live outdoors, get exercise and enjoy grazing lush pastures. We maintain sustainable, biological farming practices that always nourish the soil life first -- the cornerstone for producing the highest quality foodstuffs -- and we never use growth hormones or stimulants.

In 2001 we started a goat dairy and a farmstead cheesemaking business!! Our goats happily browse woods, fields and pasture. Our aim is to handcraft fresh, semi-ripened and naturally aged goat and cow cheeses that you will find unique and delicious.

Goat Milk Cheeses

Fresh Chèvre--fresh goat's milk cheese with a tangy and grassy flavor.

Georgia Pecan Chèvre--soft-ripened goat milk pyramid coated in ground pecans and a white, bloomy rind.

Lumiere--soft-ripened, heart-shaped goat's milk cheese layered and covered in grape vine ash and a white, bloomy rind.

Holly Springs--raw milk, aged goat cheese made in the style of a French Pyrenees Tomme. Semi-soft texture when young, but ages into a crumbly, dry, almost grateable table cheese.

Botana--raw milk, aged goat's milk cheese made in the style of a hand-milled, bandaged English cheddar. Only made when there is an excess of goat's milk in the late Spring, early Summer. Very "botanical" with notes of clover, rye grass, and other vegetal tastes.

Cow's Milk Cheeses

Velvet Rose--soft-ripened cow's milk cheese made in the style of a Perail. Double cream with very little culture. This cheese is very rich and creamy when young, but develops a barnyardy, rustic flavor and runny consistency as it ages. Very limited production.

Green Hill--double-cream, soft-ripened cow's milk cheese with a white, bloomy rind. Very smooth texture and sweet, rich flavor.

Thomasville Tomme--raw aged cow's milk cheese made in the style of a French mountain cheese. One of only ten cheeses chosen by Slow Foods, USA to represent American raw milk cheese.

Georgia Gouda--raw cow's milk cheese made in the style of a Dutch gouda. Semi-soft texture and balanced flavor.

Myrtlewood--raw cow's milk cheese made in the style of a French Pyreenes cheese. The rind is washed in a wax myrtle (native Southern plant), balsamic vinegar, and salt mixture.

Clayburne--raw cow's milk cheese made in the style of a hand-milled, bandaged English cheddar and aged for a minimum of 6 months. Very limited quantity.

Please check the website for all seasonal cheeses such as Asher Blue (our raw cow's milk blue cheese), Georgia Crottin (a soft-ripened goat cheese), mixed milk cheddar, flavored fetas, and other "backshelf" cheeses. All cheeses are subject to availability.

Product Outlets

Our retail shop on the farm is open by appointment only. Please call or e-mail to set up a time. We sell every other weekend at the Green Farmer's Market in Piedmont Park in Atlanta from May through August, or you can check our website for a list of retail shops that regularly carry our cheeses.

Mail Order?

Yes, we ship UPS overnight when the weather is above 80 degrees and two day when it is below 80 degrees. All holiday gift boxes are shipped UPS ground in November, December, and January.

Special Events:

We have a Market Day twice a year--the last Saturday in April and the Saturday after Thanksgiving--where we open up to the public for tours, animal petting, and cheese tasting. We also take part of the O'Toole's Herb Farm Festival in Madison, Florida in Feburary, and the Wine Country Festival at Three Sisters Vineyards in Dahlonega, Georgia in June. Lastly, we participate in the High Museum Wine Auction in Atlanta every Spring.
